The Diplomat

Order the Tarling at The Diplomat and the cookies show up free the moment the bill does — a ritual the Central bar has kept since it opened in 2020, pandemic pivot included. It hasn't cracked Asia's 50 Best Bars since 2021, but Tatler put it on Hong Kong's Best 20 Bars two years running, 2025 and 2026.

The cookies come out the same minute the kitchen closes

Ask for the bill at The Diplomat and a small plate of chocolate chip cookies arrives with it — baked in-house, free, every night the doors are open. It's been part of the bar's closing routine since its earliest year and it's still running now (The World's 50 Best Bars, 20 May 2021; Hong Kong Tourism Board, checked 16 Aug 2026). It's a cheap thing to give away once and an expensive thing to keep doing without fail for six years running, which is closer to the actual point: this is a bar that treats a small, repeated gesture as worth more than a big one-off.

The whole room takes its instructions from a single 1942 painting

The design brief was Edward Hopper's Nighthawks — the diner painting, all glass and warm interior light against a dark street — and it still shows. Eighteen seats sit behind curved glass windows, matte gold trim and brown leather banquettes, down what more than one write-up has called a peculiar dark alley off Pottinger Street (Tatler Asia, 11 May 2026; The World's 50 Best Bars, 20 May 2021). Tatler's own description of the room, five years after it opened, hasn't changed much in substance: "a hidden corner bar that pours reimagined classics for those who know where to look."

There's a bar anyone can walk into, and a room you have to be sent to

The space splits in two. The front is the main bar — American tavern energy, a letterbox slot of a window, the sort of room you turn up to on a whim. Behind it, through a bright pink corridor, sits the Social Club: a separate, reservation-only space with its own bar menu and, notably, a champagne button (The World's 50 Best Bars, 20 May 2021). The Hong Kong Tourism Board describes access to that inner room as running through referral from regular guests rather than open booking (Hong Kong Tourism Board, checked 16 Aug 2026) — a soft-gated system that says plainly who the bar is building loyalty with.

It survived the one stretch when Hong Kong bars weren't allowed to be bars

The Diplomat opened in 2020 and almost immediately ran into pandemic-era social distancing rules that barred on-site alcohol service. Rather than close, it rebranded for a stretch as The Diplomat Café — pub food such as Cubano sandwiches and truffled mac and cheese, cocktails sold as takeaway in large-format bottles, hours cut to midday through early evening (Time Out Hong Kong, 15 Jul 2020). It reverted once the rules lifted. The tavern-and-Social-Club structure running today, six years and one closed-door stretch later, is the same one that came out the other side of that period — which is a more useful signal of staying power than any single award.

"Simple done right" is how the bar has described its own guiding idea since it opened — six words that cover both a Martini and a burger, and the closest thing The Diplomat has to a mission statement (The World's 50 Best Bars, 20 May 2021).

The Tarling is still the drink to order five years in

The signature is the Tarling — pandan gin, white port, baking spices, clarified orange juice and coconut water, built to read as a classic even though nothing on that ingredient list is standard (The World's 50 Best Bars, 20 May 2021). The rest of the list runs the same instinct: an English Milk Punch, an Irish Coffee, and a run of mini-format Martinis and Gibsons sized for a second round rather than a full one. All three named drinks still turn up as the bar's headline pours in Tatler's most recent write-up — a five-year hold on a house style is unusual in a city where cocktail lists tend to turn over every season (Tatler Asia, 11 May 2026). None of the four carry a published price on any source we could confirm live — ask at the bar.

It sits at the top of the city's price band, and the format explains why

The World's 50 Best's own listing places The Diplomat in Hong Kong's top price tier (The World's 50 Best, checked 16 Aug 2026). Some of that is the format rather than any single drink: a Martini here comes in a miniature pour alongside a full one, punches are built for sharing rather than solo drinking, and the kitchen is priced closer to a small restaurant than a bar snack menu. It's a room built for a full evening's tab, not a quick one-drink stop.

The burger has outlasted several of the cocktails

Food was part of the plan from the opening, not a later add-on — a kitchen built around bar snacks and a Diplomat Burger meant to stand next to the drinks rather than compete with them (The World's 50 Best Bars, 20 May 2021; The Forks & Spoons, checked 16 Aug 2026). Tatler's 2026 write-up still calls the room's food a match for the cocktail list without naming a single new dish — a sign the kitchen has settled into a short, repeated menu instead of chasing seasonal items (Tatler Asia, 11 May 2026).

One award in 2021 hasn't repeated since — and that matters less than it sounds

The Diplomat took No. 20 on Asia's 50 Best Bars 2021 and, the same year, won the list's London Essence Best New Opening award (The World's 50 Best Bars, 20 May 2021). It hasn't returned to either the main fifty or the extended 51–100 list since — not in 2022, not in 2023, and not in 2026, when seven Hong Kong bars made the main list and three others — The Opposites, The Savory Project and Tell Camellia — filled out the extended one (Time Out Hong Kong, 11 Jul 2023; Time Out Hong Kong, 14 Jul 2026). That's the honest read: this isn't currently a bar chasing that particular list. What it has instead is steadier, more repeated recognition somewhere else — Tatler's Best 20 Bars in Hong Kong, which named it in both the 2025 list, published 10 June 2025, and the 2026 list, published 11 May 2026 — back-to-back years on a shorter, more selective list than the 50 Best extended field (Tatler Asia, 10 Jun 2025; Tatler Asia, 11 May 2026).

Open six nights a week, no reservation needed for the front room

The Diplomat is at Shop 1, LG/F, H Code, 45 Pottinger Street, Central — inside the same building as several other Central bars, off the H Code laneway. It runs Monday to Saturday from 4pm into midnight, closed Sundays (The World's 50 Best Bars, 20 May 2021; The Forks & Spoons, checked 16 Aug 2026). The phone line is +852 3619 0302. The front room takes walk-ins; the Social Club at the back doesn't. Order the Tarling if you want the house style in one glass, and stay long enough for the cookies — that's still the whole idea.
